The primary purpose of this training is to become knowledgeable of the Tennessee Department of Health Food Service Establishment codes for serving healthy and appealing food. This training will teach proper use, cleaning, and maintenance of Camp Holloway and Camp Sycamore Hills’ Commercial Kitchens, equipment, and dining room procedure for large group facilitation. Food purchases, user responsibility regarding food purchases, and core provisions to be provided by the property will also be discussed.
This training must be completed before reserving the Commercial Kitchen at Camp Holloway or Camp Sycamore Hills. The commercial kitchens can only be reserved if you are planning to serve 50 or more.
